Ingredients
- 500 gr Spaghetti
- 150 gr Pancetta
- 100 gr Smoked Pancetta
- 4 Eggs
- 1 cup Parmesan (grated)
- 1 clove Garlic
- Salt, pepper
Instructions
- Cut both pancetta into small dice
- Saute pancetta until almost crispy
- Add garlic to pancetta and saute a bit longer
- Drain fat from pancetta and place into a bowl
- Beat 2 whole eggs and 2 yolks and add grated parmesan cheese and pancetta to the mix
- Cook spaghetti until al dente and remove from water into a separate bowl - add a little cooking water
- Let pasta cool a little bit so that when mixed with the eggs it does not cook the eggs
- Mix quickly and thoroughly with the eggs, pancetta, and parmesan and if needed add a little more pasta water
- Serve quickly and garnish with chopped parsley if desired
