
Sweet Sour Lentils
My first foray into the Instant Pot world...
Equipment
- Instant Pot
Ingredients
- 200 gr Carrots
- 200 gr Rutabaga
- 200 gr Spring Onions
- 200 gr Celery
- 1 Onion
- 2 sprigs of Rosemary stripped and chopped finely
- 200 gr smoked Bacon
- 2 cups Lentils green Le Puy lentils
- 800 ml stock chicken, veal, vegetable, whatever
- 200 ml White Wine Vinegar
- 2 tbsp Sugar
- Salt and Pepper
Instructions
- Dice vegetables in a 5 mm dice and slice spring onions finely
- Cut bacon into thin strips
- Saute bacon in the Instant Pot on the saute setting
- Add chopped vegetables and washed lentils
- Add water, vinegar, sugar, salt, and pepper
- Set Instant Pot to pressure cooking for 13 min
- Opt for slow cool down or pressure cook for 15 min if you use the fast cool down method
- Stir the lentils and adjust seasoning - and acidity - to taste
